Which recording speed would provide better video quality?

I want to record my favorite celebritie's interview from television but I don't know which recording mode to use. Jay Leno is interviewing, Dakota Fanning, Tom Cruise, Cameron Diaz and lots of other celebrities. Should I record in 2 hour mode or 6 hour mode if i want to record the celebritie's interviews ?? I'm using a DVD Recorder.
